: feast your eyes : DONUTS!

I have been dying to make donuts since I started my blog. Donuts are literally in my top 3 favorite foods. I’m obsessed with them. Since I am trying to eat better these days, I attempted making a (semi) healthy version. Also, taking pictures of donuts is my new favorite thing ever, I wish it was my job.

I used this recipe, but changed it up a bit: (link) < I doubled this recipe

Ingredients

Donuts  ( makes 12 )

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 3/4 cup Truvia Baking Sugar
  • 2 tsp baking powder
  • 8 Tbsp Chobani 0% Vanilla Greek Yogurt (or plain or strawberry)
  • 4 Tbsp milk (I used vanilla almond milk)
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 Tbsp unsalted butter, melted

Strawberry Frosting

  • 3-4 strawberries
  • 1 Tbsp strawberry jam
  • 1 Tbsp milk (or half-and-half)
  • 1 – 2 cups confectioners’ sugar, sifted
  • SPRINKLES!

Strawberry Frosting

Slice strawberries and puree with 1 Tbsp strawberry jam.  Pour into a medium bowl and mix in milk (or half-and-half).  Slowly stir in 1 cup sifted confectioners’ sugar, adding more until you reached the desired consistency and coloring.  I wanted thick frosting, so I added 2 cups.

Lemon Glaze 

Combine 2 tablespoons fresh lemon juice and 1 1/2 cups powdered sugar, stirring well with a whisk. Dip 1 side of the cooled doughnuts into glaze; let cool on a rack, glazed side up.

Dark Chocolate Glaze 

Melt 4 ounces bittersweet chocolate and 3/4 cup of dark chocolate chips in a bowl in microwave until smooth. Dip tops of doughnuts into chocolate and place chocolate side up on a rack to cool. 

Directions:

For donuts: Pre-heat oven to 325 degrees. Spray donut pan (or muffin pan) with non-stick spray. Set aside. In a large bowl, mix together flour, sugar, and baking powder. Set aside. In a small bowl, whisk together the yogurt, milk, egg, vanilla, and melted butter. Slowly mix wet ingredients into dry- just until fully combined. Do NOT overmix.

Use a pastry bag fitted with a large round tip (or a Ziploc bag with a corner cut off) to pipe the batter into a 6-donut pan. Fill the donut cavities about 2/3 full.  Bake 8 to 11 minutes until donuts are set and golden brown. They will spring back when touched. It took mine about 10-11 minutes. 

Allow to cool slightly before removing from pan, about 5 minutes. Dip donuts into strawberry frosting 1-3 times, depending on how thick you’d like them frosted. Top with sprinkles.

: D eye Y : Gold Dinosaurs

What you need:

  • Plastic Toy Dinosaurs
  • Gold Nail Polish – I used  Sally Hansen Xtreme Wear: Golden-I (Triceratops) & Sally Hansen Insta-Dri: Go for Gold (Brontosaurus) Thank god I watched Land Before Time as a kid because I am still shocked at my self that I knew the dino’s names off the top of my head. (P.s. I liked the Golden-I better because it was a more shiny gold )

So its pretty straight forward, go buy some awesome gold nail polish and some toy dinosaurs, (or whatever toy you want to paint gold!) and you have a fun accent piece for your fireplace or side table, or a fun little jewelry holder! I bought my toy dinosaurs from the dollar section of Target about a year ago not really having any idea why I bought them, so obviously I decided I would paint them gold. Hope you enjoy!

With easter right around the corner, I keep seeing pastels all over the place. When given any chance to wear a ton of color, i’m always down.
